Cooking Steps

Method
- In a bowl, mix together the coriander, tomato paste, garlic, mixed spices, salt, black pepper, lemon slices, and olive oil.
- Add the chicken pieces and coat well with the marinade.
- Brush the tagine dish with olive oil.
- Arrange the onion slices at the bottom of the tagine.
- Place the marinated chicken pieces on top.
- Cook the tagine overheat until the chicken is fully cooked.
- Squeeze fresh lemon juice on top and add extra lemon slices if desired.
- Add the Coopoliva olives with pepper and lemon.
- Serve the tagine hot with bread or rice.

1 bunch fresh coriander, chopped
1 lemon, sliced
1 tbsp minced garlic
2 tbsp tomato paste
2 tbsp mixed spices
1 tbsp salt
Pinch of black pepper
Coopoliva olive oil (for marinating and brushing)
1 Doux chicken, cut into medium pieces
2 white onions, sliced
4 tbsp Coopoliva olives with pepper and lemon
