Method

  1. In a bowl, mix together the coriander, tomato paste, garlic, mixed spices, salt, black pepper, lemon slices, and olive oil.
  2. Add the chicken pieces and coat well with the marinade.
  3. Brush the tagine dish with olive oil.
  4. Arrange the onion slices at the bottom of the tagine.
  5. Place the marinated chicken pieces on top.
  6. Cook the tagine overheat until the chicken is fully cooked.
  7. Squeeze fresh lemon juice on top and add extra lemon slices if desired.
  8. Add the Coopoliva olives with pepper and lemon.
  9. Serve the tagine hot with bread or rice.

INGREDIENTS

1 bunch fresh coriander, chopped

1 lemon, sliced

1 tbsp minced garlic

2 tbsp tomato paste

2 tbsp mixed spices

1 tbsp salt

Pinch of black pepper

Coopoliva olive oil (for marinating and brushing)

1 Doux chicken, cut into medium pieces

2 white onions, sliced

4 tbsp Coopoliva olives with pepper and lemon
