Method

  1. In a bowl, mix the tuna, Coopoliva olives, mayonnaise, salt, paprika, and thyme until well combined.
  2. Take two slices of toast, flatten them with a rolling pin, and cut them into round shapes.
  3. Dip the toast rounds into the beaten egg, then coat with breadcrumbs.
  4. Fry the toast in hot oil until golden and crispy.
  5. Cut the fried toast in half, stuff with the tuna mixture and fresh lettuce.
  6. Serve immediately.

3 tbsp Coopoliva olives, chopped

2 tbsp mayonnaise

Pinch of salt

Pinch of paprika

Pinch of dried thyme

1 egg, beaten

Sliced bread (toast)

Breadcrumbs

Fresh lettuce

Oil, for frying
